In these days of globalisation and the whole world becoming one big global village, one of the great unifying forces appears to be food. Delicacies from one end of the world cross all geographical boundaries, travelling on
one’s taste buds and in memories of exotic meals in foreign lands, and find themselves on menus and plates at the other end of the globe. ‘Exotic’ has become ‘everyday’ in the lexicon of the food enthusiast, and one is no longer overawed or impressed by foreign-sounding dishes, as they are now available in our own backyard.
It is with this in mind that I have put together a collection of recipes of dishes from around the world – dishes that may fill you with nostalgia for another time and another place, travels to a foreign land or perhaps a memorable meal in a restaurant right here in India. So armed with this book and a deep desire to traverse the globe on a
platter, pack your culinary bags and head for the Middle East for Kibbeh Bi Shamiyeh or Shawarma; head for Italy and a soul-satisfying Lasagne and Tiramisù; or to Spain for the tantalizing Paella. Stop by in New York for a Hot Dog or drop into a pub in England for the Shepherd’s Pie. But, if it’s the East you prefer, Thai Chicken Noodle Soup will do the trick, as will the Indonesian Nasi Goreng or Chicken Satay. And don’t let the thought of not being able to procure the foreign ingredients deter you. Almost all the ingredients used in these recipes are
