I have lost count of the number of times I have been asked to list my favourite recipes. I have no doubt that the lists have differed each time, as when it comes to food it is hard to restrict oneself to just a few. Besides, one's mood, a recent discovery, a new experience, a renewed acquaintance with an old favourite, they all shape the list. This is the current list of one hundred of my favourite recipes, foods that I not only love to eat but also love to cook.
Needless to say, they are the first among equals, for like any parent I am loathe to name a favourite child, each on being special in their own way.
That being said, let me welcome you to my world which revolves around FOOD, FOOD and more food. This book of favourites has been published to coincide with the launch of my 24-hour food channel-the first of its kind in India. The channel will celebrate the diversity of the culinary traditions and practices of our country, and explore the cuisines of the world. Many of the dishes feature on my list of favourites and will be featured on the programmes as well.
We are a nation obsessed with food. Food plays a starring role at every festival and occasion, in every rite and every ritual. From infancy to maturity, food is the language of love. And like love, it knows no bounds-it grows and blossoms. While our constantly evolving food habits and tastes are rooted in our home kitchens, they are increasingly responsive to the myriad new culinary styles, flavours and ingredients we encounter in books, restaurants, on our travels and now, even on TV. FOOD FOOD, the 24-hour TV food channel will give you the opportunity to watch me cook my favourite dishes and I am sure they will become your favourites too. Let the aromas of a 100 dishes from all over the world perfume your home and fill you with a passion and hunger for more.
